BANANAS ARE TRICKY







Bananas are probably the trickiest of fruits to store. They are shipped in after being picked green and stored in warehouses until sold. When sold they are treated so they will turn yellow and start to ripen. Once started, the ripening process cannot be stopped, only slowed down. If you place the fruit in your refrigerator the skin will turn black. If you leave them on the countertop they will begin to over-ripen in approximately 3 to 4 days. Bananas are a very high emitter of ethylene gas. Even the banana peel continues to emit ethylene gas after being peeled and discarded. Ethylene (or Ethene, proper name) is the chemical compound with formula C2H4. It is the most produced organic compound in the world. Global production of ethylene exceeded 75 million metric tons per year in 2005. It is a commercial and residential product in very high demand.

Ethlyene acts physiologically as a hormone in plants. It exists as a gas and acts at trace levels throughout the life of the plant by stimulating or regulating the ripening of fruit, the opening of flowers and the shedding of leaves.  It can shorten the shelf life of many fruits by hastening ripening and floral senescence.  Bananas, tomatoes and apples will ripen faster in the presence of ethylene. Bananas placed next to other fruits will produce enough ethylene to cause accelerated fruit ripening. Ethylene in very small amounts can destroy green leafy vegetables in very short order and can cause significant economic losses for growers, suppliers, markets and florists.
